What happens when I add iron nails to black soybeans while cooking?
Hi! I've read on many websites that adding iron nails to black soybeans while cooking either turns it purple, or intensifies the black colour. But I've tried it out and found that there is no difference between cooking it with iron nails or without iron nails. Hope that someone can tell me the real colour change, and provide some scientific explanations! Thanks! (:

The iron supposedly reacts with the tannins in the beans, producing a color change. A couple of recipes I've seen call for rusty iron nails, so maybe the oxidized iron reacts better with the tannins. The rust does not sound too appetizing, though. Maybe you could try cooking them in a cast iron pot - there would be more iron surface area to react. I'll have to try this - very interesting!
